This Summer, have your Young Chef join our virtual cooking camp with a focus on food, fun and fundamentals, and creating delicious family friendly menus each week. Sign up for as many classes as you like with discounts given for multiple registrations. A twist on Canadian Classics is this week's inspiration. We'll make Sweet Potato Poutine, oven-baked Panko-coated Chicken Fingers and Salted Maple Brownies. Sounds good, Eh? (plant-based chicken or fish can be substitued for the chicken)

 What you will need:

 Ingredients (serves 4):

  • 1 lb boneless skinless chicken breasts (about 2), cut into 1” strips (OR plant-based chicken breasts or firm white fish for fish fingers)
  • 6 eggs
  • 1/2 cup + 2 tbsp unsalted butter
  • 1 cup + cheese curds (or pizza style mozzarella, grated)
  • 2 small/medium sweet potatoes
  • 180 grams white or cremini mushrooms
  • 1 onion
  • 2 cloves garlic
  • 1/3 cup maple syrup
  • 2 cups flour
  • 2 cups panko bread crumbs
  • 140 grams dark chocolate (good quality)
  • 3/4 cup sugar
  • 1/3 cup icing sugar
  • 1/4 tsp maple extract
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 3 cups beef or vegetable stock (tetra pack)
  • 2 1/2 tsp smoked paprika
  • 1/4 tsp cayenne (optional)
  • Flaked sea salt (for brownies-optional)
  • Salt
  • Pepper
  • Your child's favourite dipping sauce for chicken fingers

 Equipment:

  • Cutting board
  • Chef knife/paring knife
  • 2 baking sheets
  • 2 medium saucepans
  • Oven-safe wire baking (cooling) rack- for cooking chicken fingers on
  • Parchment paper (for lining baking trays and cake pan)
  • 8” square cake pan (metal, silicone or glass)
  • Immersion blender, blender or food processor (for making gravy smooth-optional)
  • Measuring cups & spoons
  • Liquid measuring cup
  • Medium mixing bowl
  • 4 small mixing bowls/cereal-sized bowls
  • Tongs
  • Whisk
  • 2 wooden spoons
  • Vegetable peeler
