Sweet Potato Pie
Serves 6
Prep Time: 10 min, Bake Time: 15 min
1 can (40 oz) cut sweet potatoes in light syrup
¾ tsp ground cinnamon
¼ tsp salt
15-17 marshmallows
Preheat oven to 350°.
1. Drain sweet potatoes in colander, discard syrup.
2. Place potatoes in medium bowl and sprinkle with cinnamon and salt. Mash until smooth.
3. Place marshmallows on their side around edge of pie plate, on top of potatoes.
4. Bake 14-16 min or until potatoes are heated through and marshmallows puffed and toasty brown.
5. Remove from oven and let cool slightly. Serve warm as a side dish.
